Ingredients
- 200g unsalted butter
- 200g icing sugar
- 60g plain flour
- 150g almond meal
- 5 egg whites
- zest 1 lemon
- nuts, berries, chocolate chips (optional)
Instructions
1 Preheat oven to 200°C Melt the butter and set aside to cool slightly.
2 Mix the icing sugar, flour and almond meal in a bowl then stir in the butter, egg whites and lemon zest.
3 Spoon the mixture into greased individual oval-shaped baking moulds. Press some nuts, berries or chocolate chips in the top if using, then bake for 20 minutes.
4 Allow to cool slightly, then unmould.
