Spiced apples with star anise and cinnamon

Ingredients

  • 8 firm sweet apples, peeled, cored and cut into quarters
  • 3 cinnamon sticks
  • 6 star anise
  • 400g caster sugar
  • juice of 2 lemons

Instructions

1 Combine all ingredients in a large saucepan then add water to just cover. Set over a moderate heat and slowly bring to a boil. Simmer for 10 minutes, then turn the heat off and allow to cool in the liquids.
