Ingredients
- 4 eggs, separated
- 1 cup vegetable oil
- 2 tsp vanilla extract
- 300g caster sugar
- 350g rye flour
- 2½ tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- ½ tsp ground cloves
- 3 Granny Smith apples, grated

1 Preheat oven to 180°C. Mix the yolks, oil, vanilla and sugar in a one bowl. Sift the flour, baking powder and spices into a second. Fold together gently with the apples. Whisk the whites to soft peaks and fold in, then spoon into a buttered and flour 1½L loaf pan and bake for 35-40 minutes, until a skewer can be inserted and removed cleanly.
