Apple and vanilla muffins for school lunches

  • 300g self-raising flour
  • 2 tsp ground cinnamon
  • ½ tsp ground ginger
  • 150g brown sugar
  • 125g unsalted butter, melted
  • 2 eggs
  • 185ml milk
  • 1 tsp vanilla extract
  • 2 apples, peeled and coarsely grated
  • ½ cup sultanas, chopped


1 Preheat oven to 180°C. Sift the flour and spices into a large bowl, then add the sugar, butter, eggs, milk and vanilla and beat until smooth. Mix in the apples and sultanas, then spoon into 12 lined muffin cups. Bake for 20-25 minutes, until a skewer can be inserted and removed cleanly.


PROFESSIONAL Tip: to make these muffins cholesterol free and a bit healthier, replace the butter with vegetable oil.
