Banana bread

  • 3 large very ripe bananas (700g pulp)
  • 1 tsp natural vanilla extract
  • 2 eggs
  • 1 egg yolk
  • 120ml vegetable oil
  • 180g natural yoghurt
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground nutmeg
  • 200g dark brown sugar
  • 375g self-raising flour
  • 1 tsp bicarbonate of soda


1 Preheat oven to 180°C. Combine the banana pulp and vanilla in the bowl of an electric mixer and beat with the paddle on medium speed for 2 minutes, until smooth. Add the eggs, yolk, oil, yoghurt, spices and sugar and beat for 3 minutes.
2 Sift the flour and bicarbonate of soda together, then fold into the banana mixture. Beat for 2 minutes to develop some structure in the cake. Pour into a lined medium loaf pan and bake for 35-40 minutes, until a skewer can be inserted and removed cleanly.
