CHOCOLATE-CARAMEL POTS DE CRÈME WITH SPICY STRAWBERRY SALAD

Ingredients

  • 750ml milk
  • ¾ cup caster sugar
  • 2 tsp vanilla extract
  • 1 tsp almond essence
  • finely grated zest of 2 oranges
  • 2 Tbsp cornflour
  • 2 Tbsp cocoa powder
  • 300g dark chocolate, finely chopped
  • 100g unsalted butter
  • ½ cup dulce de leche
  • 2 punnets strawberries, chopped
  • 2 kiwifruit, chopped
  • 2 oranges, segmented
  • 2 sprigs mint leaves, chopped

Instructions

1 Pour the milk into a medium saucepan and bring to a simmer. Whisk in the caster sugar, vanilla, almond essence and zest. Simmer for 5 minutes.
2 Put the cornflour and cocoa in a bowl and whisk with ½ cup water. Add half the hot milk mixture, then return to the saucepan. Simmer until the mixture thickens, then beat in the chocolate and butter until smooth.
3 Spoon the dulce de leche into the bottom of glasses, then top with the chocolate mixture. Toss the fruit and mint , then serve along side.
