Ingredients
- 100g unsalted butter, at room temperature
- 200g caster sugar
- 1 egg
- 2 tsp vanilla extract
- 300g plain flour
- 2 Tbsp milk
- 1 cup pistachios, chopped
- ¾ cup white chocolate chips
- 1 cup coffee crystal sugar
Instructions
1 Preheat oven to 180°C. Combine the butter and sugar in the bowl of an electric mixer and beat with the paddle attachment on medium speed for 5 minutes, until light. Beat in the egg and vanilla.
2 Fold in the flour and milk gently, then mix in the nuts and chocolate. Roll up to a log 6cm wide in baking paper, then chill until firm. Roll in coffee crystal sugar, slice 1cm thick, arrange on lined. Oven trays, then bake for 20-22 minutes, until golden. Cool on a wire rack.
