Cheddar-Pepperleaf Biscuits

  • 1 cup plain flour
  • ¼ cup self-raising flour
  • 1 tsp ground pepperleaf
  • large pinch cayenne pepper
  • 125g cold unsalted butter, coarsely grated
  • 1 cup vintage cheddar cheese, grated
  • ¼ cup finely grated Parmesan
  • 2 Tbsp orange juice


Preparation time: 5 minutes
Cooking time: 20 minutes
Serves: 16

1 Preheat oven to 180°C. Sift the flours, pepperleaf and cayenne into a bowl. Add the butter and rub with fingertips until only specks of butter remain. Add the cheeses and mix gently to combine, then pour in the juice and press together to make a dough.
2 Form into a log, wrap in cling film, then refrigerate until completely firm. Slice in 1cm discs, then bake for 15-18 minutes, until golden.
