Redcurrant and Lychee No-Jito

  • 4 brown sugar cubes
  • ΒΌ bunch mint leaves
  • 6cm piece ginger, grated
  • 3 limes
  • 12 lychees, halved
  • 1L old-fashioned lemonade
  • 8 drops bitters
  • 1 punnet redcurrants, picked

Serves: 4

1 Combine the sugar cubes, mint and ginger in the bottom of a cocktail shaker and pound with a muddling stick. Chop one lime, add to the shaker with 4 lychees and muddle again. Stir in the lemonade and bitters.
2 Slice the remaining limes and add to classes with the redcurrants, remaining lychees and ice. Pour in the lemonade mixture through a fine strainer.
