A Sozo-Ryoku: Cocktail of Sake, Tawny Port and Blueberries

  • ½ cup caster sugar
  • 2 Tbsp toasted sesame seeds
  • 4cm piece ginger, cut into fine batons
  • 1 punnet blueberries
  • juice of 2 limes
  • 2 tsp raspberry vinegar
  • 125ml tawny
  • 250ml sake
  • 250ml soda water


1 Combine the sugar and sesame seeds in a mortar and pound until aromatic. Add the ginger and pound again. When sugar has dissolved, add the blueberries, crush lightly, then press through a fine sieve.
2 Pour the lime juice, vinegar, tawny and sake into the blueberry mixture and stir well. Pour over ice, then top with soda water.
