Traditional Billy Tea with Garden Herbs and Dried Roses

  • 1½ Tbsp Russian caravan tea leaves
  • 2 sprigs lemon thyme
  • 12 rosemary petals
  • 1 fresh bay leaf
  • thickly-sliced zest of 1 orange
  • 1 tsp dried rose petals
  • sweetened condensed milk, to serve


1 Combine the tea leaves, thyme, rosemary, bay leaf, zest and rose petals in a 2L tea pot or billy. Fill with boiling water and stand for 4 minutes. Strain into mugs, then serve with sweetened condensed milk
