Milk-thyme damper rolls

Ingredients

  • 600g self-raising flour
  • 2 tsp baking powder
  • 1 tsp fine salt
  • ½ bunch thyme, finely chopped
  • 400ml milk

Instructions

1 Preheat a lidded barbecue to medium-high. Combine the flour, baking powder, salt and thyme in a large bowl, then make a well in the centre. Pour in the milk and mix well, until just combined. Do not overwork.
2 Using lightly floured hands, forms into 12 x 80g balls, and place in a greased ½ cup muffin tray. Arrange the tray over a roasting pan half-filled with water and set over the griddle set to high. Cook for 35 minutes, until lightly-golden, then serve with the turkey.
