  • 500g plain flour
  • 50g lard, softened
  • 180ml warm water, approx
  • 1 Tbsp extra virgin olive oil
  • ¼ tsp ground white pepper
  • ½ tsp fine salt
  • 180g shaved prosciutto
  • 240g fior di latte mozzarella, sliced
  • ½ bunch salad rocket
  • ¼ bunch mint leaves
  • cooking oil spray


1 Combine the flour, lard, water, oil, pepper and salt and in a bowl and mix well. You may need a little more or less water, depending on your flour – you are looking for an elastic and workable dough. Knead until smooth, then set aside for 5 minutes. Divide into 8 pieces and roll out until 2mm thick.
2 Top one side of each disc with some prosciutto, cheese, rocket and mint, then fold over. Sprinkle with cooking oil spray, then cook on a barbecue grill over medium heat for 4 minutes each side, until lightly browned. Serve immediately.
