Skirt Steak with Smoked Cauliflower Purée

Ingredients

  • 700g MVN Skirt Steak
  • salt and pepper
  • 1 Tbsp Luchito sauce (charred chipotle)
  • ¼ cup extra virgin olive oil
  • half head cauliflower
  • ½ tsp ground cumin seeds
  • Apple wood chips
  • 300g green beans, trimmed
  • ½ tsp fennel pollen

Instructions

Preparation time: 20 minutes
Cooking time: 35 minutes
Serves: 4

1 Season steak generously with salt and pepper, then rub with Luchito sauce. Set aside for 10 minutes.
2 Steam the cauliflower until tender. Puree with cumin, season with salt and smoke it with apple wood chips.
3 Drizzle steak with half the oil, then set on a hot BBQ grill for 3 minutes each side until medium rare.
4 Steam the beans until just tender. Dress with the remaining oil. Sprinkle with salt and scatter with fennel pollen. Serve with the cauliflower purée and carved steak.
