Ingredients
- 200g plain flour
- 2 tsp caster sugar
- 1 tsp salt
- 130ml boiling water
- 1 egg
- 2 tsp light soy sauce
- 1 tsp sesame oil
- 2 tbsp chilli oil
- 2 tbsp mushroom soy
- ½ bunch shallots, sliced finely
Instructions
1 Mix the flour, sugar, salt, water, egg, light soy and sesame oil to form a dough, then cover and allow to rest for an hour.
2 Divide the dough into four and roll out to 2mm thick, brush with chilli oil and mushroom soy, then cover with the shallots.
3 Roll up the pancake, twist into a ball, and then roll out again to 4mm thick.
4 Fry in a little oil until golden on both sides. Season with a little salt and serve in eight pieces, drizzled with a little sweet soy.
